our head chef travels the country in
search of the best suppliers.
So that you can enjoy Japan's distinct seasons,
we pack each dish with seasonal ingredients,
beautifully presented for a rich dining experience.
The rice we use is Koshi-Hikari,
is sourced from trusted farmers.
This hearty rice, with its firm,
clearly separated grains,
is the star ingredient of our kamameshi,
a dish containing seasonal ingredients and broth cooked with rice in a small pot.

As Japan has four distinct seasons,
we would love for you to try our seasonal ingredients.
From hamo (pike conger eel) and ai (sweetfish) to
vibrant selections of vegetables,
summer Japanese dishes are often lightly seasoned.
Rich, fatty fish is typically enjoyed in the winter.
Of course, sashimi is in season in the winter,
but fish shabu-shabu is another delicacy
we would love for you to try.
